It produces oligosaccharides of various sizes by randomly hydrolyzing the internal β-1,4-mannosidic linkages in β-mannan. It also acts on glucomannan and mannooligosaccharides. EC 3.2.1.78. Maximum activity is at pH 6.5 and 40 degree C.
